A reversible knit is a different problem from a reversible woven. A woven can be lined, bonded, or built as two cloths sewn back to back. A knit has to be constructed so that both faces are finished faces, which is why a reversible knit is nearly always two colors: each face is showing a different yarn. This one is black on one side and white on the other. The raised seams follow from the same constraint. On a knit with no wrong side there is nowhere to conceal a join, so the seams are made visible and slightly proud instead, and the trims are set in a contrasting color so that what would have been hidden becomes the finish. In cotton rather than wool it stays crisp, which a structure built this way needs, because a yarn with a halo would blur the very edges the garment is made of.
