The word fleece has come to mean polyester, and that is a fairly recent theft of a word that used to mean a sheep. This one is sixty-eight percent wool and thirty-two percent cotton, which puts it back where it started. The practical difference is not subtle. A wool pile holds warmth when it is damp, where a polyester pile stops working the moment it wets through, and it does not build the static charge that makes a synthetic fleece cling to everything it is worn under. The cotton at just under a third is what makes it wearable next to a shirt: it takes the prickle out of the hand and gives the pile something stable to sit on. Chunky is an accurate word for it.
